Nachos Part 3 - Nacho Cheese Sauce


For Base (béchamel):

Half a shallot (about ¼ cup diced)

¼ Cup garlic cloves, minced

½ # unsalted butter

1 ½ cups Red Mill Rice Flour (NOT AP Flour)

1 Qt heavy cream

1 Qt whole milk


To make Nacho Cheese:

2 # Cheese Blend Mozzarella, Cheddar, Pepper Jack

½ cup Red Salsa

½ cup Green Salsa
